Mixed Salad with Smoked Tomatoes

This recipe has been kindly supplied by Kathryn and Paul Lloyd of Lloyd's Gourmet Condiments and it is just one of the wonderful recipes that can be created with their delicious Smoked Tomatoes

 
Ingredients...

2 handfuls of select washed mixed lettuces/salad greens (cos, endive, radicchio, baby spinach, beetroot leaves etc.)
4 snow peas cut into strips
1 small Spanish (red) onion, thinly sliced
1 avocado, peeled and sliced
1 tub of Lloyd's Gourmet Condiments Smoked Tomatoes, drained (keep the oil) and cut into thin strips
Small bunch of snow pea sprouts

Dressing:
2 tbs freshly squeezed lemon juice
5 tbs of oil from the smoked tomatoes
1 tsp sea salt
1 tsp freshly ground black pepper  

 
Method... 

Toss lettuce/salad greens into a medium bowl. Top the salad greens with snow peas, onion, avocado and smoked tomatoes. Garnish with snow pea sprouts (pile them up in the middle of the salad). Put the dressing ingredients into a jar and shake well. Sprinkle over the salad ingredients. Serve immediately and enjoy.
