Barbequed Red Claw Crayfish

Red Claw Crayfish are delicious just grilled on the BBQ. Cedar Creek Farm's Kaffir Lime Oil adds a fresh zesty flavour that calls for fresh crusty bread to soak it up.

 
Ingredients...

3-4 Red Claw Crayfish per person
Cedar Creek Farm Kaffir Lime Oil
lemon or lime wedges

 
Method... 

If the crayfish are live, then place them in the freezer for an hour to anaesthetise them.

Remove the Red Claw Crayfish from the freezer and cut them in half lengthways.  On a hot BBQ grill, place the crayfish, shell side down first and leave them to cook for 2 ½ minutes. Brush them with a little Kaffir Lime Oil and then turn them over. Leave them on the grill for another 30 seconds. Do not be inclined to over cook them as they will become tough – the shell will begin to redden and is a sign that they are ready. Place on a platter and drizzle with Kaffir Lime oil and lemon juice.

Serve with fresh crusty bread, a salad and an icy cold glass of beer!
