Fried Salmon on Hommus with Pesto

This is a delicious meal. There are lots of locally produced homusses or pestos, or you can make your own, either way the really accentuate the delicate flavours of the salmon. |

Method... |
Heat butter in a frying pan. When hot place in salmon pieces and cook on each side approximately 3-5 minutes. Place a dollop of hommus on the centre of each plate and spread to a diameter of 10-12 cm. Place some snow pea shoots and basil sprigs on top of hommus. When salmon is ready place on top of sprouts sprinkle with macadamia nuts and drizzle with Bush Pesto. Serve. Serves 4. |
