How to prepare and store herbal teas
To retain the freshness of Kin Kin herbal teas it is recommended that you keep the tea bags rolled up in the provided polypropylene bag the original box. The box should be stored in a dark, dry place. This simple method will keep your Kin Kin herbal teas fresh and health giving.
The tea bags are made o f 100% biodegradable materials.
How to prepare your tea:
Pour almost boiling water over one tea bag and let steep for 2 – 4 minutes maximum, sweeten with honey, if desired.
Delicious iced tea:
Pour 1 litre of almost boiling water over 4 teabags, steep and chill. Add ½ litre of Apple Juice if desired, top with Mint leaf.

At Moran Group Herbs/Kin Kin Tea they dry herbs in their energy efficient Solar Dryer.
The North facing dryer has a heat collection panel angled at approximately 25°, angled to efficiently to heat the air with the warmth of the sun. Inside the dryer the organic herbs are spread on drying shelves and manually turned 3 to 4 times a day.
A system of fans circulates the hot air, and once the air is saturated with moisture it is evacuated and fresh air drawn in. This process repeats itself throughout the day. The drying process usually takes 2 – 3 days.
This gentle drying process (without direct sun on the herbs) allows herbs to dry slowly, retain their colour and most importantly all their health giving properties.

Chefs love to use them to make sauces to accompany meat dishes, while others make it, skin and all, into a delicious jam. This versatile fruit can also be used for juice and in the making of wine and cordials. Feijoa yoghurt and ice cream are also very popular.
During the fruit season from early February to early May, Barry and Lola can be found at the Farmers’ Market at Noosa on Sundays introducing the fruit with tastings to those who have not yet experienced the unique flavour.

After a chance meeting with a New Zealander Lola and Barry Whitehead decided to attempt growing a few Feijoa trees on their retirement block. After living in a shed and building their home they expanded the orchard to 1000 trees on the 5 acre property in Mapleton, half of which are presently producing.
Harvest time from mid February to mid May can become very hectic; tending to fruiting, pruning and fertilizing to ensure next year’s crop. The small green fruits are sweet, suggesting a combination of pineapple and guava or pineapple and strawberry with overtones of winter green or spearmint, which leaves a refreshing aftertaste in the mouth. Feijoa fruit produce a strong lingering perfume even before they are fully ripe.

Here are some helpful hints on Cleaning and Cooking your Spanner Crabs…
Purchasing
When purchasing crabs live you should let your supplier know if you intend to store them in a live seafood holding tank so you receive the strongest crabs possible. Holding tanks should be operated at a temperature o f between 16º and 18ºC and crabs checked at least 2-3 times per day. If a crab or crabs become weak they are best removed from the tank and processed. Live crabs are graded into 4 sizes; small (300-500g), medium (500-700g), large (700-900g) and extra large (900g+) and are packed in polystyrene boxes with a net weight of approximately 11-12kg.
On receiving you crabs
Crabs should be checked immediately as they are received to make sure they are still alive. If you intend to tank your crabs, they should be checked frequently in the first 6-12 hours.
If you intend to cook your crabs, they are best killed by placing them in an ice slurry until dead. On removal from the ice slurry crabs are ready to cook or alternatively placed in a chiller, ensuring there is good air circulation around the crabs. This will allow you to hold them for up to 12-24 hours before cooking. If crabs are not chilled quickly they will go black.
Cleaning and cooking your crabs
There are two main methods of cooking; steaming and boiling, with your crabs whole or cleaned. It is more of a personal preference the way you cook your crabs because any combination of the above produce an excellent result.
Here are some cooking times based on a 750g crabs:
Whole crab: Steamed or boiled for 12 to 13 minutes.
Cleaned Crab: Steamed or boiled for 8 to 10 minutes.
Chilling the crabs immediately after cooking in an ice slurry or even cold tap water is important at this stage to stop the meat cooking further. We have also found that it is at this stage that the adding of salt to the chilling water and the length of time spent chilling will influence the saltiness of your product.
Storing your crabs
After cooking and initially cooling whole crabs should be stored in shallow container, belly down and allowed to drain excess water with in a chiller with good air circulation to ensure quick cooling. After approximately 6 hours drain excess fluid and cover crabs; they are stored this way to prevent drying out. The cleaned crabs can be handled in the same way, but cover earlier to prevent drying out. If you plan to meat your crabs try picking after the crabs are initially cooled and are still warm, it makes extracting meat much easier. To chill meat quickly when picking this way, place some ice and water in a stainless steel bowl or pan and place another on top. Always chill meat quickly in small batches and cover when in the chiller to ensure a premium product.
How to extract meat from cooked spanner crabs:
Step 1 – Removal of shell
Lay crab in the palm of left hand with thumb over tail flap.
Grasp front part of the shell with right hand and twist until shell separates from body.
Step 2 – Cleaning
Remove gills and wash body to remove viscera
Step 3
Remove Legs and claws and lightly crush body using a downward pressure with palm of hand or a cutting board.
Step 4
Separate meat from membranous internal skeleton, crack claws and remove meat.

Spanner Crabs Noosa offers the very freshest in local spanner crabs. Partners Alison Reed and Jason Sgro’s formed Spanner Crabs Noosa in 2002 with the goal to develop a local market and raise the profile of the spanner crab by supplying a quality live product into the market, which they believed was overlooked by the larger exporters.
From their humble beginnings they were supplying a small local market with a live tank which held 40 kg of product in their back shed. Now they fly their live crabs directly to a number of top Sydney restaurants as well as continuing to supply local markets. They now occupy a 160m² factory equipped with live holding tanks, a processing room, cold and freezer rooms.
What Alison and Jason are most proud of is the demand that they have created for their spanner crabs by supplying quality live product that Jason, as a fisherman catches, then tanks, sells, packages and ships, all them selves. In return they have some of the best chefs in Australia creating a variety of wonderful dishes using Spanner Crabs Noosa!
