Peter Wolfe’s Vietnamese foodie experience…

Wow, I have just come home from the most wonderful lunch; crocodile spring rolls, sand crab and pork deep fried spring rolls, both with zesty dipping sauces, and the absolute highlight seafood bouillabaisse with green mango salad… OMG it was just wonderful.
Maggie Shalhoub, from Sunshine Coast based independent travel agency, Live It Travel and tour host Peter Wolfe treated returned travellers from Live It Travel’s March Vietnam Taste It tour to this magnificent lunch which was a recreation of some of their Vietnamese dining experiences.
The Taste It tour is a 14 day food extravaganza of Vietnam lead by the Sunshine Coast’s Peter Wolfe, who some of you may know as the man behind Cedar Creek Farm Bush Foods. Peter and Shauna are great innovators in the food industry with their eclectic range of condiments that they have created based on their passion for Australian bush foods, so when Peter goes to Vietnam he takes that passion with him and explores their bush foods.
Apparently the trip was an absolute blast and they are now getting ready for their next one in October (I believe there are limited spaces still available if you are quick). So over lunch we listened to some fabulous foodie stories while eating the most wonderful food that we all helped to prepare.
While the dishes were traditional Vietnamese style, Peter added his own style to it incorporating Australian bush foods into the dishes; crocodile to the spring rolls, Australian Native pepper, lemongrass, turmeric and ginger from his own garden, Warragul greens – I love the way he improvises and it always tastes divine.
