Fortune Red Label Beef™could definitely be considered the future of innovative farming. Premium quality, hormone free yearling beef at wholesale prices delivered to your door – it does not get much better than this. Through innovation and creative thinking Mieke Fortune has turned a hobby on her 50 acre property near Yandina into a business that prides itself on quality and farming integrity.
Mieke utilises a “Fodder Solutions System” a fresh organic barley sprouting factory for finishing her 56 head of cattle. Cattle are cell grazed – which is not a new idea,plus fed a custom grain ration.This means that the cattle get to happily graze on the paddocks, enjoying a quality of life, while their supplementary fodder helps them to gain weight resulting in a premium quality beef that has an amazing flavour and juiciness.
The cattle are hand fed daily whilst grazing for a minimum of 100 days at which point they have gained the satisfactory amount of condition. The meat itself is absolutely free of hormone growth promotants and is not pumped with water or antibiotics. This is an important factor as many would be aware that hormone growth promotants are commonly used in battery feed lots that produce grain fed beef.
Grass fed beef tends to produce a cream to yellow coloured fat which provides the meat with an exceptional taste, whilst the grain aids in tenderness. Every one of their yearlings gets a biscuit of sprouted barley grass each day along with their grain ration complementing the grass they eat in the paddock.
Fortune Beef prefers to finish the softer, naturally marblingbreeds such as Murray Grey, Angus and Wagyu. “We have developed 3 premium beef labels”. Red Label is our standard yearling, usually Murray Grey,this is finished on grain in the paddock for 100 days. Our Blue Label is Angus, it has 150 days of finishing and the Black Label is Wagyu, 200 days of premium finishing.
The cattle graze locally on the Sunshine Coast, are locally processed and hung for a 2 week period. “Many of our customers are taken back by the super quality of the lesser premium cuts, we constantly get feedback that the Rump is like eating the Rib Fillet, and the Roasts when cut into steaks and BBQ’d are just like the Rump”.
Butchers will rarely sell Yearling beef, and as you are purchasing directly from Fortune Beef, and cutting out the middleman in the way of the retailer, you are limited to purchasing in either quarter, half or whole beef lots but the advantages of quality and savings is phenomenal.
You can however purchase either ‘take away, ready to go’ pre-specified yearling quarters or you can custom specify your own quarter and choose how you would like all 12 cuts to be processed, via the specification sheet. The portions are based on overall cuts of the beast. For instance, a quarter beast is a quarter of the overall cuts – not just the hind or forequarter. So that means that you get 25% of everything, allowing you to utilise all the cuts of the beef based on your personal preferences on a number of options. It might include rump, t-bone, eye fillet, rib fillet, topside, round, silverside, brisket, chuck, blade, rolled rib roast, gravy beef, gluten free sausages, mince and optional bones and offal. There are also the options of sliced thick or thin, corned, cryovaced or crumbed. So you can pretty much personalise your orders dependent on your needs. It is all snap frozen and shatter packed individually as requested so you can easily just defrost what you need as you need it.
There are not many opportunities to buy meat directly from the farmer anymore; with farmland diminishing and regulation making it more and more difficult, this is a gem of a find. The bonus is that the meat is absolute premium quality which is not only ethically produced, but local as well.
Beautifully, local restaurateurs are also taking on the beef with some fabulous feedback.
